My Grandfather on Mom's side, Charles Wesley Bussey, and his brother, Walt, travelled a good bit of the deep south during the Great Depression. In short, they worked many of the CCC Camps in south east Georgia trying to make a living to support their families. Anyway, this was something they could make in a single pot on an open fire. All of the ingredients were readily available. They could cook it with hamburger, pork, chicken, or whatever meat they could get. And, at those times that they couldn't get meat, they could still have hot, healthy meal.
The legend grew, the meals were served. Now, it's just a good ole hearty meal that's pretty tasty on a cold night.
Preparation:
Peel and chop the onion. Peel and slice the carrots. Put the
potatoes on hold for a while.
Instructions:
Combine the ground chuck, salt, pepper, minced garlic, and chopped onions and
brown. Drain any grease. Add the carrots, tomatoes, and tomato
paste, cover and let it brew. The longer, the better! As it cooks,
add salt and pepper to taste. You may have to add a little water as it
cooks...
After letting it cook for a few hours, put a meal's worth in another pot. Peel, cut, and add the potatoes. When they're done, serve over rice.
Notes:
The recipe above will cook a good size pot, and feed a family of four at least
twice. Having said that, potatoes don't freeze well, but the rest does
just fine in the freezer. For a quick, easy meal, just pull a couple of
quarts out of the freezer, peel and cut a couple of potatoes, and toss 'em in.
