Aunt Betty's Biscuits

Light and fluffy, Aunt Betty's Biscuits are as good as it gets!  They do everything a biscuit is suppose to do; good for soppin' at dinner time or cut 'em in half and add a little butter and jelly at breakfast.  My personal favorite is to take a thumb and auger out the middle for a little cane syrup... mmm, it's good.

Ingredients
2 C. Plain Flour
2 t. Baking Powder
1/4 t. Baking Soda
1 t. Salt
2/3 C. Buttermilk
1/3 C. Oil (Safflower or Sunflower)

Instructions:
Preheat the oven to 375 degrees.  Sift the dry ingredients into a mixing bowl.  In a second mixing bowl, blend the buttermilk and oil.  Combine the dry & wet ingredients (just before baking) and place the dough on a sheet of wax paper.  Knead the dough, place another sheet of wax paper on top and flatten the dough to about 1 inch.  Use a biscuit cutter and cut out the biscuits.  Place them on an un-greased cookie sheet (use parchment paper to eliminate sticking).  Bake them for 10-15 minutes.  If they are not brown, turn the oven to broil and brown the tops.

Makes about 1 dozen.
